I finally got a donut pan this Christmas and I am so excited!  My family loves donuts, however I don’t make them at home because I don’t fry our food.  I tried the recipe on the package, however it wasn’t the texture my husband wanted.  I got to work and came up with one that is a little dense, has a nice crumb texture and it’s delicious.  What I love about my recipe is that it uses yogurt so you can make them any flavor you want, you’re adding in some protein, and they are so simple to make!  If you don’t have a donut pan you could always make them in a mini muffin pan.

Ingredients are as follows: 
1 egg
1/2 C yogurt (any flavor you want)
1/4 C sugar
1/4 C oil
1 tsp. vanilla
1 C flour
1/2 tsp. baking soda
1/4 tsp. salt
Directions:
Preheat oven to 350 degrees; grease a mini donut pan (or mini muffin pan).
Whisk the egg then mix in the yogurt, sugar, oil and vanilla.
Add the flour, baking soda and salt.
Only mix until it is combined; do not over mix.
Evenly divide batter into prepared pan.
Bake for 8-10 minutes; until a toothpick comes out clean.
Remove from pan and allow to cool on a wire rack.  Eat them plain or frost with your favorite icing!
My family couldn’t decide what icing they wanted so I made the cream cheese icing (that I use for my cupcakes; on the left) and a powdered sugar icing (that I use for my apple fritter bread; on the right).  Both were delicious and if you don’t like icing they are just as good plain!
