We’ve all had those days. It’s 5:30 in the evening, everyone is tired, the kitchen is quiet, and the temptation to just order takeout is so, so real. Life moves incredibly fast these days, and finding the time to gather around the table for a comforting, home-cooked meal can feel like a genuine puzzle.

That is exactly why my heart did a little happy dance when the lovely folks at Gooseberry Patch reached out and asked me to take a look at their newest cookbook, Rush-Hour Recipes. If you know me, you know how much I adore their cookbooks—they always feel like a warm hug from a friend. And let me tell you, this one couldn’t have arrived at a better time.

A Sneak Peek: The One-Bowl Pineapple Sheet Cake

To give you an idea of just how wonderfully simple these recipes are, I have to tell you about the Pineapple Sheet Cake in this book. It is the absolute definition of a “rush-hour” dessert.

You don’t even need to pull out a heavy mixer for this one. You just stir the cake ingredients—including a whole can of crushed pineapple with its juices—together in one bowl, pour it into a pan, and bake. Because the pineapple brings so much natural moisture to the batter, the cake bakes up incredibly tender, soft, and light every single time.

Once it cools, you top it with a rich, velvety cream cheese frosting that takes only a couple of minutes to whip up. A quick sprinkle of chopped pecans or toasted coconut on top, and you have a dessert that tastes like it took hours but was completely stress-free. It’s exactly the kind of recipe that makes this book a keeper!

Prep Time 10 minutes
Servings 12

Ingredients

For the Cake:

  • 2 cups all-purpose flour
  • 2 cups sugar
  • 2 tsp. baking soda
  • 1 tsp. vanilla extract
  • 2 eggs beaten
  • 1 can 20 oz. crushed pineapple, undrained (you need all those lovely juices!)

For the Cream Cheese Frosting:

  • 8 oz. cream cheese softened
  • 1/2 cup butter softened
  • 1 cup powdered sugar
  • 1 tsp. vanilla extract
  • Optional: chopped pecans or toasted coconut for sprinkling on top!

Instructions

  • Preheat your oven to 350°F (175°C).
  • Lightly grease a 15x10-inch jelly-roll pan or a standard 9x13-inch baking dish.
  • In a large mixing bowl, stir together the flour, sugar, and baking soda.
  • Add the vanilla extract, beaten eggs, and the entire can of undrained crushed pineapple.
  • Mix by hand until completely combined and smooth.
  • Spread the batter evenly into your prepared pan.
  • Bake for 25 to 30 minutes, or until the top is a beautiful light golden brown and a toothpick inserted into the center comes out clean.
  • While the cake bakes, cream together the softened cream cheese, butter, vanilla, and powdered sugar with a hand mixer until it is perfectly smooth and fluffy.
  • Let the cake cool completely, then spread the cream cheese frosting evenly over the top.
  • If you're using them, sprinkle your chopped pecans or toasted coconut over the frosting.
  • Pop it in the fridge for a bit to let the frosting set before slicing and enjoy!

Preheat oven to 350 degrees.  Grease a 15″ x 10″ jelly-roll pan.

Mix together the flour, sugar, baking soda, vanilla, eggs and pineapple.

Spread batter into prepared pan.

Bake 25-30 minutes or until a toothpick comes out clean.  While the cake is baking, cream together the cream cheese, margarine (or butter), vanilla and powdered sugar.

Spread on the cake (I then put mine in the fridge to get it nice and cold).

Slice, serve, and enjoy!

The name does not do it justice, as it is a rolled cookie dough filled with brown sugar and walnuts,baked to a golden brown and covered in powdered sugar. I have had many a 'rush hour' when my two boys were growing up and I was working full time as a teacher.
